Anthocyanins (etiam anthocyans, e graeco: ἀνθός (anthos) = flos + κυανός (kyanos) = caeruleus) sunt pigmenta aquarum solubilia vacuolaria, quae rubra, purpurea vel caerulea pendentia pH apparent. Ad parentis genus pertinent molecularum quae per viam phenylpropanoidem vocant; sunt inodorae et paene insipidae, gustui conferentes ut sensum modice astringentem. Anthocyanius occurrunt in omnibus fibris plantarum superiorum, cum foliis, caulibus, radicibus, floribus, et fructibus. Anthoxanthins clara, alba ad flavum versos anthocyanins in plantis occurrentibus. Anthocyanins sumuntur ab anthocyanidis additis saccharo pendentibus.
Plantsrich in anthocyanins sunt Vaccinium species, ut Vaccinium, quadrupedum, et bilberry; Rubus baccae, cum RUBUS IDAEUS, rubicundus, et rubus; rubra, cerasus, cortices eggplant, oryza nigra, uva Concordia, uva muscadine, brassica rubra, petala violacea. Anthocyanins minus abundant fixa, asparagus, pisum, foeniculum, pirum, annuum, et omnino absint in quibusdam cultis viridis gooseberries. Persica rubra sunt anthocyanins opulenta.
